Food with JP passion: Perfect pork

Pork and apple are the perfect accompaniment and this spiced apple basting liquid will bring your pork roast to a new dimension. Lightly spice yet sweet it perforates the tender pork to give it an incredible flavour.

The Spiced apple sauce would also go well with Bacon, you may not use it all depending on the size of your piece of meat and leftovers can be stored in an airtight container in the fridge for up to a week.

As we move to the second phase of lockdown, restrictions being lifted means we can have a small group of friends or family over for short periods at a time therefore in my eyes there has never been a better time to get back to the Sunday roast and this recipe is perfect for such occasions.

Spiced Apple Loin of Pork

Ingredients: Serves (4- 6 people)

  • 1.5kg – 2kg Loin of Pork
  • 200g Cooking apples peeled and cored
  • 1 Onion finely chopped
  • 1 Teaspoon mild chilli powder
  • 1 teaspoon ground turmeric
  • 50g light brown sugar
  • 100ml cider vinegar
  • 4 cloves
  • 100g unsalted butter
  • Sea salt & Ground black pepper

Method:

1. Preheat your oven to 200 degrees / Gas mark 6.

2. In a medium sized pan melt the butter then add in the onion and cooking apples and on a medium heat with the lid on cook for 10 minutes.

3. Then add the brown sugar, cloves, cider vinegar, chilli powder, turmeric, slat & pepper and mix well to combine.

4. With the lid off allow to cook for another 10 minutes until the apples have broken down.

5. Drizzle a little of olive oil on the pork, sea salt and cracked black pepper then baste the loin of pork generously and pop into your oven and cook for 25 minutes per 500g plus 20 additional minutes basting the roast pork every 20 minutes or so.

6. Serve with your favourite roast trimmings and enjoy.

The spicy apple flavours perforate the loin of pork to give you the most delicious roast pork while the juices in the roasting pan are delicious poured over roasted veg! As we start moving back to some sense of normality there’s never been a better time to cook for family and friends and get back to what we do best albeit adhering to social distancing guidelines. This is a real feast; perfect for those family gatherings which I promise you is a real crowd pleaser – it went down a storm when I made it last weekend.
